Green Mole with Pork / Mole Verde con Cerdo
Ingredients:
A piece of pork meat.
1 onion
3-4 cloves of garlic
1-2 serrano chiles to taste
1 bunch of cilantro
1-2 green squash
1 small can if peas
1 small can of green beans
10 – 15 tomatillos
salt and pepper to taste
Preparation:
Put pork to cook with onion and garlic add salt to taste
In a separate pot add peeled tomatillos, chiles serrano, 1 onion and some garlic you can add the onion and garlic that you put in the meat to cook.
After all of the ingredients have cooked for about 5 minutes, put everything into the blender and add the cilantro and blend very well. In a separate pot add a small amount of cooking oil and fry the ingredients of the blender. Let simmer for about 10 minutes and add the pork meat and the squash that you cut into small pieces not too small because they will fall apart. Let simmer for an additional 20 minutes and add the peas and green beans. Let simmer for about 30 – 45 minutes until everything is cooked. Enjoy and I hope that you understand everything.
