Albondigas Recipe (Meatball Soup)
Ingredients:
1 Lb Ground Beef
1 Diced tomato
1 Medium diced onion
2 Tablespoon of rice
2 Eggs
½ teaspoon of chopped parsley
½ teaspoon of chopped oregano
½ teaspoon of chopped mint
1 Pinch of Thyme
3 Boiled Tomatos
1 Slice of Onion
Preparation:
In a container add the meat, diced tomato, onion, herbs, salt, eggs, thyme and rice. Mix everything together and make meatballs.
Blend boiled tomatoes and slice of onion, strain and cook with a bit of oil, add water and when boiling add Albondigas (meatballs), cook and add salt to taste.
