Veracruz Style Fish Recipe


- 1 tablespoon oil
- 4 cloves garlic, minced
- ½ cup chopped onion
- 1 kg. chopped tomatoes peeled, seeded and cut into squares
- 1 piece of green pimento cut into julienne
- Salt and pepper to taste
- Laurel and Thyme
- ½ teaspoon dried oregano
- ¼ cup capers
- 6 fillets red snapper
- 2 tablespoons butter
- 6 jalapeno peppers


Heat oil in a saucepan. Fry the onion with the garlic. Add tomatoes and cook. Then add the peppers and season with salt and pepper, bay leaf and oregano. Boil a little, cover the pan and simmer for eight minutes. Incorporate the capers and olives and cook 5 minutes more. Once it is found that the mixture is well seasoned, remove from heat.

Preheat oven to 190 ° c. Wash the fillets, dry add salt and pepper to tasteon both sides. Brush the fish woth butter on both sides.
Place fillets in a greased baking pan and add tomato sauce. Cover the dish with foil and baked for 10 to 15 minutes. At the time of serving, you can garnish each fish with sliced jalapeno peppers.
